Ingredients

  • 400g of gammon

  • 1 onion.

  • 1 bulb of garlic 

  • 2 carrots

  • 5g thyme

  • 5g rosemary

  • 3 bayleaf

  • 10 peppercorns 

  • 200g honey

  • 100g soft brown sugar

  • 400 grams of potatoes

  • 4 eggs

  • Salt and pepper to taste

  • Vegetable oil for frying

Method

-Place the gammon into a pan of water in the fridge overnight to draw out some of the salt. Then poach in another pan of freash water for around 30 minutes with the Thyme, Rosemary, garlic, onion, pepper, Bayleaf and carrot to help Flavour ham. leaving on the side in the water to cool fully before roasting.

-Peel away any skin, leaving a good layer of fat score of the fat and covered in honey and brown sugar, then roast at 180C, basting every five minutes until glazed and sticky. This should take around 30 minutes. Set aside until later..

-Peel the potatoes and cut them into thick chips or wedges. Rinse the potatoes under cold water to remove any excess starch, then place them in a cold pan of salted water and bring to the boil, simmer for around eight minutes until softened slightly, then drain and set aside.

-Heat vegetable oil in a deep frying pan or a deep fryer to around 180°C (350°F).

-Carefully add the potato chips to the hot oil and fry them until golden and crispy. This usually takes about 8-10 minutes. Make sure to stir occasionally to ensure even cooking.

-Once the chips are cooked, remove them from the oil using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. Season with salt and pepper to taste.

-In a separate non-stick pan, heat a little oil over medium heat.

-Crack the eggs into the pan, one at a time, making sure to keep the yolks intact. Season the eggs with salt and pepper.

-Fry the eggs until the whites are set and the edges are crispy, while keeping the yolks runny. This usually takes about 2-3 minutes. If you prefer your eggs well-done, cook them for a bit longer.

-While the eggs are cooking, heat another non-stick pan and take some slices of ham. Cook for a few minutes on each side until they are heated through and lightly browned.

-Once the eggs and ham are cooked, assemble your dish by placing the ham, fried eggs, and chips on a plate.

-Season the eggs with additional salt and pepper if desired.

-Serve your delicious Ham, Fried Egg & Chips immediately while still warm.
