Spicy Prawn Stir-Fry

Serves: 2

Ingredients

- 250g Prawns (De-shelled & De-veined)

- 400g French Beans (Sliced)

- 100g Bean Sprouts

- 1x Shallot (Sliced)

- 2 Cloves of Garlic (Sliced)

- 2x Red Chillis (Sliced)

- 30g Fresh Ginger (grated)

- 2x Limes (Zest & Juice)

- 1 tbsp Fish Sauce

- 3 tbsp Soy Sauce

- 1 tbsp White Wine Vinegar

- 4x Spring Onions (Sliced)

- Black Pepper (to taste)

- 2 tsp Cooking Oil

- 2tsp sesame oil

Method

- Place a wok or Frying pan on a high heat, then add your oil, ensuring the pan is well coated.

- Pour in your Prawns & sliced shallots and stir on a high heat for 1 minute. Then add your french beans, garlic & ginger.

- Continue to fry on a high heat for 2-3 mins before adding the white wine vinegar, fish sauce, Soy sauce, and the zest & Juice of 1 lime.

- Finish with bean sprouts, Spring onions & Black pepper.

-Serve with a wedge of lime, a drizzle of sesame oil, and enjoy!
